Fried item almost neutralising wine (7)

I haven't cracked this one yet — but the brilliant team at Fifteensquared have:

Chi[p](=fried item) + anti(=neutralising). Anti for neutralising seems a bit odd – I assume it’s in the sense of an antiseptic or antigen i.e. something that cancels out something else.
