I haven't cracked this one yet — but the brilliant team at Fifteensquared have:

BAK [e] (cook in an oven) without the last letter (reduced), then LAVA (molten rock = hot liquid). A dessert from the region around Greece and Turkey: layered pastry with chopped nuts and honey.
