I haven't cracked this one yet — but the brilliant team at Times for the Times have:

fortunately, I remembered that, often in crosswords, the “kitchen” is the percussion section of the orchestra, and the ending M caused me to guess the answer then parse it. Demos these days are contained or “kettled” by the police, and RUM is a spirit.
